Ingredients:

For the dough:

  • 2 cups of whole wheat flour

  • 1/4 cup of ghee or oil

  • 2 cups of boiled and mashed potatoes

Instructions:

  1. To make the dough, in a mixing bowl, combine the flour and salt. Mix in the ghee or oil until the mixture resembles coarse crumbs.
  2. Slowly add water and knead the dough until it becomes smooth and pliable. Cover the dough and let it rest for at least 30 minutes.
  3. To make the filling, in a mixing bowl, combine the mashed potatoes, onions, cilantro, cumin powder, red chili powder, and salt. Mix well.
  4. Divide the dough into 10-12 equal-sized balls.
  5. Roll out one dough ball into a circle, about 1/8 inch thick. Place a spoonful of filling in the center of the dough circle.
  6. Fold the dough over the filling and seal the edges to form a semi-circle.
  7. Roll out the stuffed dough again into a circle, about 1/4 inch thick.
  8. Heat a griddle or skillet over medium heat. Place the stuffed paratha on the griddle and cook until brown spots appear on both sides, about 2-3 minutes per side.
  9. Serve hot with chutney or yogurt.

Note: You can also add other spices like garam masala, amchur powder or ajwain to the filling for added flavor.
