Dhokla recipe at home
Dhokla is a popular snack in India that is made from a fermented batter of rice and chickpea flour. Here is a simple Dhokla recipe at home:
Ingredients:
- 1 cup rice flour
- 1 cup chickpea flour (besan)
- 1 tsp salt
- 1 tsp sugar
- 1 tsp turmeric
- 1 tsp lemon juice
- 1/2 tsp baking soda
- 1 cup water
- 1/2 cup yogurt
- 3 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 2 tbsp chopped fresh cilantro
- 1 green chili, finely chopped (optional)
Instructions:
- In a large bowl, mix together the rice flour, chickpea flour, salt, sugar, and turmeric.
- Add the lemon juice, baking soda, water, yogurt, and 3 tablespoons of oil to the dry mixture and mix well until you have a smooth, thick batter.
- Cover the bowl with a plate or towel and set it aside in a warm place for about 2-3 hours to allow the batter to ferment.
- After the batter has fermented, heat a steamer or a large pot filled with water over medium heat.
- While the water is heating up, lightly oil a round or square cake tin or a dhokla mould and pour the batter into it.
- Place the tin or mould in the steamer or pot and steam the dhokla for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- While the dhokla is steaming, heat the remaining 1 tablespoon of oil in a small pan over medium heat. Add the mustard seeds and cumin seeds and allow them to crackle for a few seconds.
- Remove the dhokla from the steamer or pot and pour the spiced oil over the top. Sprinkle with cilantro and green chili, if using.
- Cut the dhokla into squares or wedges and serve hot with chutney or yogurt on the side. Enjoy!
