Instructions:

  1. Rinse the dal in a colander and add it to a pot with 3 cups of water. Bring to a boil and then reduce heat to low and let it simmer for 15-20 minutes or until the dal is cooked.
  2. In a separate pan, heat oil and add cumin seeds, asafoetida, mustard seeds, cumin seeds, and dried red chilies. Once the seeds start to crackle, add the chopped onion and sauté until golden brown.
  3. Add minced garlic and grated ginger to the pan and sauté for a minute.
  4. Add chopped tomatoes and sauté until they turn mushy.
  5. Add cumin powder, coriander powder, turmeric powder, and red chili powder (if using) to the pan and sauté for a minute.
  6. Add the chopped spinach to the pan and sauté until it wilts.
  7. Once the dal is cooked, add the spinach mixture to it and stir well. Bring to a boil and let it simmer for 5 minutes.
  8. Season with salt to taste and garnish with chopped cilantro before serving.
  9. Serve the dal palak with rice or roti.
