Ingredients:

  • 1 cup dried chickpeas, soaked in water overnight

Instructions:

  1. Drain and rinse the soaked chickpeas. Place them in a large pot and cover with water. Bring to a boil and simmer until tender, about 1 hour.
  2. Heat the oil in a large skillet over medium heat. Add the onion, garlic, ginger, and jalapeño and cook until the onions are softened about 5 minutes.
  3. Add the coriander, cumin, turmeric, paprika, and garam masala and cook for 1 minute.
  4. Add the tomatoes and cook until the sauce has thickened, about 5 minutes.
