Ingredients:
- 1 cup dried chickpeas, soaked in water overnight
- 3 tablespoons vegetable oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 jalapeño pepper, finely chopped
- 1 tablespoon ground coriander
- 1 teaspoon ground cumin

Instructions:
- Drain and rinse the soaked chickpeas. Place them in a large pot and cover with water. Bring to a boil and simmer until tender, about 1 hour.
- Heat the oil in a large skillet over medium heat. Add the onion, garlic, ginger, and jalapeño and cook until the onions are softened about 5 minutes.
- Add the coriander, cumin, turmeric, paprika, and garam masala and cook for 1 minute.
- Add the tomatoes and cook until the sauce has thickened, about 5 minutes.
- Add the cooked chickpeas and cook until heated through about 5 minutes.
- Season with salt to taste and serve, garnished with fresh cilantro.
