  1. Rinse the dal in a colander and add it to a pot with 3 cups of water. Bring to a boil and then reduce heat to low and let it simmer for 15-20 minutes or until the dal is cooked.
  2. In a separate pan, heat oil and add mustard seeds, cumin seeds, and dried red chilies. Once the seeds start to crackle, add the chopped onion and sauté until golden brown.
  3. Add minced garlic, grated ginger, and curry leaves and sauté for a minute.
  4. Add grated coconut, cumin powder, coriander powder, turmeric powder, and red chili powder (if using) to the pan and sauté for 2-3 minutes or until the coconut turns light brown.
  5. Add the chopped cabbage and sauté for 2-3 minutes.
  6. Once the dal is cooked, add the cabbage mixture to it and stir well. Bring to a boil and let it simmer for 5 minutes.
  7. Season with salt to taste and garnish with chopped cilantro before serving.
  8. Serve the Cabbage Kootu with rice or roti.
