Cabbage Kootu Recipe or Cabbage Dal

Ingredients:
- 1 cup Toor dal (split pigeon peas)
- 2 cups finely chopped cabbage

Instructions:
- Rinse the dal in a colander and add it to a pot with 3 cups of water. Bring to a boil and then reduce heat to low and let it simmer for 15-20 minutes or until the dal is cooked.
- In a separate pan, heat oil and add mustard seeds, cumin seeds, and dried red chilies. Once the seeds start to crackle, add the chopped onion and sauté until golden brown.
- Add minced garlic, grated ginger, and curry leaves and sauté for a minute.
- Add grated coconut, cumin powder, coriander powder, turmeric powder, and red chili powder (if using) to the pan and sauté for 2-3 minutes or until the coconut turns light brown.
- Add the chopped cabbage and sauté for 2-3 minutes.
- Once the dal is cooked, add the cabbage mixture to it and stir well. Bring to a boil and let it simmer for 5 minutes.
- Season with salt to taste and garnish with chopped cilantro before serving.
- Serve the Cabbage Kootu with rice or roti.
