Baingan Bharta Recipe (Indian Mashed Eggplant)
Baingan Bharta is a popular North Indian dish made with eggplant, spices, and tomatoes. Here is a recipe for making Baingan Bharta:
Ingredients:
- 1 large eggplant
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 tbsp oil
- 1 tsp ginger-garlic paste
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- 1/4 tsp turmeric powder
- 1/2 tsp garam masala powder
- Salt to taste
- Coriander leaves for garnish
Instructions:
- Preheat oven to 375°F (190°C) or grill the eggplant on high flame until the skin is charred and the flesh is cooked through.
- Allow the eggplant to cool, then peel and mash the flesh with a fork or potato masher.
- Heat oil in a pan over medium heat. Add the ginger-garlic paste and sauté for a few minutes.
- Add the onions and sauté until they turn translucent.
- Add the tomatoes and sauté until they turn soft and mushy.
- Add the mashed eggplant, cumin powder, coriander powder, red chili powder, turmeric powder, garam masala powder, and salt to taste. Mix well.
- Add 1/4 cup of water, cover, and cook for 5-7 minutes or until the eggplant is heated through.
- Garnish with coriander leaves and serve hot with rice or roti.
Note: You can also add some other vegetables like peas, carrots, or even paneer to make it more nutritious.
