Ingredients:
- 2 sheets of puff pastry, thawed
- 3 medium-sized potatoes, boiled and mashed
- 1 small onion, finely chopped
- 1 green chili, finely chopped
- 1/2 tsp cumin seeds
- 1/2 tsp coriander powder
- 1/4 tsp turmeric powder
- 1/2 tsp garam masala powder
- 1/2 tsp amchur powder (dried mango powder)
- 1 tbsp fresh coriander leaves, finely chopped
- Salt to taste
- Oil for frying
Instructions:
In a pan, heat a tablespoon of oil and add the cumin seeds. Once they start spluttering, add the chopped onions and green chili. Saute until the onions turn translucent.
Add the coriander powder, turmeric powder, and mashed potatoes. Mix well and cook for 2-3 minutes.
Add garam masala powder, amchur powder, fresh coriander leaves, and salt to taste. Mix everything well and let it cool down.
Preheat the oven to 180°C (350°F).
Roll out the puff pastry sheets on a floured surface. Cut them into equal-sized squares.
Place a tablespoon of the potato filling in the center of each puff pastry square.
Fold the pastry over to encase the filling and press the edges to seal.
Place the patties on a baking tray lined with parchment paper.
Brush the patties with a little oil and bake them in the preheated oven for 20-25 minutes or until they turn golden brown.
Serve the hot Aloo Patties with tomato ketchup or mint chutney.
