Ingredients:
- 500 grams of small potatoes, boiled and peeled
- 1 cup water
- 2 tablespoons oil
- 1 teaspoon cumin seeds

- 3 cloves
- 3 green cardamom pods
- 1 teaspoon grated ginger
- 1 teaspoon grated garlic
- 1 medium onion, finely chopped
- 1 cup chopped tomatoes
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon salt
- 2 tablespoons yogurt or cream
- 2 tablespoons chopped fresh coriander leaves
Instructions:
- In a pan, heat the oil over medium heat. Add the cumin seeds, bay leaves, cinnamon stick, cloves, and green cardamom pods and cook for 1-2 minutes or until fragrant.
- Add the grated ginger and garlic to the pan and cook for an additional 1-2 minutes.
- Add the chopped onions to the pan and cook until they are golden brown.
- Add the chopped tomatoes to the pan and cook for 2-3 minutes or until they are soft.
- Add the red chili powder, turmeric, coriander powder, and garam masala to the pan and stir to combine.
- Add the boiled potatoes to the pan and stir to coat them in the spice mixture.
- Add the water and salt to the pan and stir to combine. Bring the mixture to a boil and then reduce the heat to low. Cover the pan and simmer for 10-15 minutes or until the potatoes are tender and the sauce has thickened.
