  • 2-3 tablespoons warm water

Instructions:

  1. Rinse the toor dal in cold water and add it to a large pot along with 3 cups of water. Bring to a boil and then reduce the heat to low and simmer for 20-25 minutes or until the lentils are tender.
  2. Add the turmeric and salt to the dal and stir to combine.
  3. In a separate pan, heat the ghee or oil over medium heat. Add the cumin seeds, mustard seeds, and cumin powder and cook for 1-2 minutes or until fragrant.
  4. Add the grated ginger, green chilies, and chopped onions to the pan and cook for an additional 2-3 minutes or until the onions are translucent.
  5. Add the chopped tomatoes and cook for an additional 2-3 minutes or until they are soft.
  6. Add the coriander powder, garam masala, and red chili powder to the pan and stir to combine.
  7. Add the spiced tomato mixture to the pot with the dal and stir to combine. Bring to a boil and then reduce the heat to low and simmer for an additional 10 minutes.
  8. While the dal is cooking, make the dhokli. In a large bowl, mix together the wheat flour, salt, and ghee or oil until it forms a crumbly texture. Add enough warm water to form a soft dough.
  9. Divide the dough into small balls and roll each ball out into a thin circle. Using a knife or a dough cutter, cut the dough into small squares or diamonds.
  10. Drop the dhokli pieces into the pot with the dal and stir to combine. Cover the pot and cook for an additional 10-15 minutes or until the dhokli are tender.
  11. Garnish with fresh coriander leaves and serve hot.
